For over fifteen years, the folks behind Catering by Saffrons have been delighting the Tampa Bay area with their unique gourmet cuisine, which combines the flavors of the Caribbean with delicious and eye-pleasing dishes. Now they have agreed to share some of their culinary expertise with us.

2042 Wednesday, October 8: All About Ginger
Ginger has many uses, both medicinal and culinary. There are many varieties of ginger, and their flavors and uses depend on where they are grown. In this class you will learn how to incorporate ginger in your cooking and how to use it to cure what ails you. The entire menu from drinks to dessert will be made using a variety of gingers, from Jamaican ginger root to Thai pickled ginger.

2043 Wednesday, November 12: Thanksgiving – Celebrating the Passing of the Hurricane Season
This is a class with a difference. In the Islands, after a hurricane has passed the Islanders are often without lights or water. The neighbors get together and bring whatever they have in their homes, and we cook together, party together, and give thanks together. This class will be conducted Iron Chef Style. Each student is invited to bring a secret ingredient that our master chefs will incorporate into our meal.

2044 Wednesday, December 10: Christmas Latino
Together we will explore the ways that Latinos celebrate the holiday through food. We will begin with Puerto Rican Pork glazed in a guava BBQ with Mofongo (crushed green plantains). Our next example will be Moceqeka, a Brazilian sea food stew. Then we’ll top off our celebration with traditional flaming rum cake from Jamaica.
