column_padding_type=&#8221;default&#8221; gradient_type=&#8221;default&#8221;][vc_column_text css=&#8221;&#8221; text_direction=&#8221;default&#8221;]For the third year, Assistant Professor of Anthropology <a href=\"https:\/\/www.eckerd.edu\/anthropology\/faculty\/guengerich\/\">Anna Guengerich<\/a>, Ph.D., took her Winter Term students on a tour of cultural cuisines from tamales to jollof rice in her course, Archaeology of Food.<\/p>\n<p>\u201cThis class explores what we can learn about human societies through the foodways of the past,\u201d Guengerich says. \u201cThe course is built around four meals that we cook and eat together, representing cultural contexts such as Indigenous Mexico, ancient Rome, Native American foraging and the African Diaspora.\u201d<\/p>\n<p>Jemma Nelson, a senior <a href=\"https:\/\/www.eckerd.edu\/environmental-studies\/\">environmental studies<\/a> student from Roswell, Georgia, says, \u201cThe class has helped me visualize the similarities in all of our lives and how food is a way of bringing communities together to create traditions and special memories. They cooked dishes such as black-eyed pea salad, banana fritters, peanut brittle, chicken and greens stew, and jollof rice.<\/span><\/p>\n<p><span style=\"font-weight: 400\">\u201cThe Archaeology of Food was a fascinating course for me because it revealed the deep connection between people and food throughout history,\u201d says Max Garr, a junior <\/span><a href=\"https:\/\/www.eckerd.edu\/human-development\/\"><span style=\"font-weight: 400\">human development<\/span><\/a><span style=\"font-weight: 400\"> and <\/span><a href=\"https:\/\/www.eckerd.edu\/psychology\/\"><span style=\"font-weight: 400\">psychology<\/span><\/a><span style=\"font-weight: 400\"> student from Minneapolis, Minnesota. \u201cI especially enjoyed learning how food is a fundamental part of human life and how practices like feasting were used as expressions of power. The class showed how major food related-decisions have shaped human societies and continue to influence us today.
